Have y’all ever made granola croutons? They are so easy to make and are utterly delicious, especially when paired with baked pears. My favorite granola to use is @thetoastedoat! Let me know if you give them a try. I hope you’re having a great week!
:
𝑷𝒆𝒂𝒓 𝑺𝒂𝒍𝒂𝒅:
Mixed greens
Grapes, halved
Walnuts, roughly chopped
Goat cheese crumbles
Fresh Figs
Baked Pears
TTO Granola croutons
Honey Balsamic Dressing

1. In a bowl combine mixed greens, grapes, and walnuts. Set aside.
2. MakeTTO granola croutons and baked pears. Add to salad.
3. Sprinkle goat cheese crumbles and add honey balsamic dressing.

𝑩𝒂𝒌𝒆𝒅 𝑷𝒆𝒂𝒓𝒔:
1 Anjou Pear
1 tbsp butter
Dash of cinnamon

1. Preheat oven to 425 degrees.
2. Cut pear vertically in half. Melt butter, add dash of cinnamon. Spread a thin layer on each pear slice.
3. Bake for 10 minutes.
4. Let cool before topping salad to avoid mixed greens from wilting.

𝑮𝒓𝒂𝒏𝒐𝒍𝒂 𝑪𝒓𝒐𝒖𝒕𝒐𝒏𝒔

To make croutons, heat oven to 400 degrees. Place Toasted Oat Granola on foil lined baking sheet and drizzle with honey. Bake 8-10minutes. Let croutons cool completely before adding them to salad. Store in an air tight container.

The answer: usually my family eats [or chokes down] my food. Tonight I had my parents over for dinner. After making my own leftover container, I made one for my dads lunch tomorrow. Don’t worry, food doesn’t go to waste around here... unless it’s completely botched! 😉

𝘏𝘦𝘺 𝘺’𝘢𝘭𝘭, 𝘪𝘵’𝘴 𝘍𝘢𝘭𝘭!🍁🧡 Have y’all made a #TraderJoes run since the fall items hit the shelves? If so, what are your favorite fall items?I’m sharing one of mine with WEEK 9 (3 weeks late) of 20 minute meals, Fall edition! This 𝗕𝗿𝗼𝘄𝗻 𝗕𝘂𝘁𝘁𝗲𝗿 𝗣𝘂𝗺𝗽𝗸𝗶𝗻 𝗥𝗮𝘃𝗶𝗼𝗹𝗶 recipe is full of delicious fall flavors and is super simple to make. Recipe is below and not on the blog...yet!

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
1 package #traderjoes pumpkin ravioli [butternut squash would be just as delicious]
4 tablespoons butter
Salt and pepper to taste
1 tablespoon fresh herb, chopped [I like rosemary or thyme]
1 tablespoon Parmesan cheese, grated

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. Boil water in a pot and cook ravioli according to package.
2. While ravioli is cooking, start your brown butter sauce. In a shallow skillet, melt butter on medium high heat, stirring constantly. Keep stirring until butter begins to foam... keep stirring (~5min total). Butter will begin to brown. This happens fast so immediately turn off your heat and remove from burner.
3. Add in freshly chopped herbs,pinch of salt/pepper and Parmesan cheese. Stir until incorporated. Flavors will fuse together and will easily become the quickest most delicious sauce ever! Add ravioli to pan and stir until evenly coated.
4. Serve with Parmesan cheese sprinkled on top. Garnish with fresh herbs!

This is one of my most popular meals so if you’re new around here, start with a 𝗕𝗿𝗲𝗮𝗸𝗳𝗮𝘀𝘁 𝗦𝗸𝗶𝗹𝗹𝗲𝘁. They are more of a process than a recipe... Just throw in any veggies from the fridge and whatever leftovers you have from the week and then add some eggs! I have seen mixed reviews on this new Cacio e Pepe Ravioli, so I had to test it out myself, but added a summer twist. Y’ALL THIS IS GOOD! 🙌🏼 I don’t understand what people don’t like about it. I would definitely buy it again! I’m still waiting to get my hands on the frozen Cacio e Pepe frozen spaghetti, but if it tastes anything like this, then it’ll be worth the wait!

I did not originally plan on including this in one of my weekly 20 minute meal posts, but it’s too good not to share... and easy since Joe did the hard work for us! This is the WEEK 7 post... I’m still playing a little bit of catch up!🙃

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
1 package #TraderJoes Cacio e Pepe ravioli
1 tbsp butter
1 tbsp olive oil
1 ear corn, cut off the cob
2 slices prosciutto
Arugula
Freshly grated Parmesan cheese

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. Cook ravioli according to package.
2. In a nonstick skillet, melt butter and olive oil together over medium-high heat. Add corn and prosciutto slices. Crisp up for about 4-5 minutes.
3. Add cooked ravioli and stir to evenly coat.
4. Plate with arugula and freshly grated Parmesan cheese!

𝗦𝘂𝗺𝗺𝗲𝗿 𝗦𝘁𝗼𝗻𝗲 𝗙𝗿𝘂𝗶𝘁 𝗦𝗮𝗹𝗮𝗱:
Mixed greens
Shallots, thinly sliced
1 peach, sliced
3-4 very cherry plums (can be found at #Traderjoes)
Fresh blueberries
Candied walnuts, roughly chopped
Prosciutto however you prefer (“next time make it crispy”... yes mom)
1 ball of burrata

𝗦𝗼𝘂𝗿 𝗖𝗵𝗲𝗿𝗿𝘆 𝗗𝗿𝗲𝘀𝘀𝗶𝗻𝗴:
3 tbsp olive oil
1/2 cup sour cherry juice
2 tbsp Red wine vinegar
1-2 tsp Honey
2 tsp Dijon mustard
Pinch salt + pepper

Before you ask... this sour cherry juice was leftover from a special sour cherry order my mom made at @yutzysfarmmarket in Plain City, OH! If you’re looking for cherry juice, contact some of your local farmers markets!
