Rounding out this perfect weekend with a 𝑯𝒐𝒎𝒆𝒎𝒂𝒅𝒆 𝑷𝒆𝒂𝒏𝒖𝒕 𝑩𝒖𝒕𝒕𝒆𝒓 𝑪𝒖𝒑. They are chocolatey, nutty, creamy, and all around delicious! Perfect for an after school snack or dessert after dinner. 🤤

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
1 bag of macadamia chunk @thetoastedoat granola
1/2 cup old fashioned oats
3 Tbsp peanut butter or any nut butter
2 Tbsp honey

𝙵𝚒𝚕𝚕𝚒𝚗𝚐:
1 cup peanut butter-melted

𝚃𝚘𝚙𝚙𝚒𝚗𝚐:
12 oz. dark chocolate
1 Tbsp coconut oil

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. In a medium bowl combine granola, peanut butter and honey.
2. Grease mini muffin pan and divide the mixture in 12 cups. Scoop 1-1 1/2 tablespoons of mixture into muffin cup and firmly press down making a dent in the center of each cup. Freeze for 5-10 minutes so cups firm up.
3. Melt peanut butter and pour in the center of each granola cup. Freeze for another 5-10 minutes until firm.
4. Finally, melt dark chocolate and coconut oil and spoon melted chocolate on top of peanut butter. Chill until chocolate has set, about 10 minutes.
5. Store in the fridge in air-tight container.

I hope your day was full of candy, family, good food and maybe some cocktails. I made a board for my family and added this berry basket to get some height. I love it! Might be a new regular on boards throughout berry season. What do y’all think?

Did you know March is National Autoimmune Disease

Did you know March is National Autoimmune Disease Awareness Month?

I was officially diagnosed with Psoriatic Arthritis in July of 2020. I say ‘officially’ because it was a long time coming. It took 4 years of symptoms and several different specialists to receive a proper diagnosis and treatment plan.

Since I started opening up about this part of my life, I have received a shocking amount DMs from people that can relate or people that are trying to navigate a journey of their own.

In an effort to raise awareness about Psoriatic Arthritis, I wrote a blog post sharing my long, frustrating journey and the epiphany I had earlier this year. It’s a long post so pour yourself a glass of wine while you read...And give me some grace because it’s much easier for me to write about food than personal experiences.

I’ll share a second blog post soon inclusive of my treatment plan and commonly asked questions.

Cookies in 15 minutes? Yes, you heard me!

These No-bake Bird Nest Cookies with mini @cadburyusa are eggcellent are ready to eat within just 15 minutes! The double as the perfect Easter treat! 🤤

INGREDIENTS:
3/4 cup butterscotch chips
3/4 cup chocolate chips
1 cup rolled oats
1 cup @thetoastedoat (Macadamia Chunk)
Mini Cadbury Eggs

INSTRUCTIONS:
1. Prepare baking sheet with piece of wax paper. Set aside.
2. In a large bowl, melt the butterscotch and chocolate chips.
3. Stir in rolled oats and The Toasted Oat Granola until combined.
4. Drop heaping tablespoon onto prepared baking sheet. Press 3 mini Cadbury eggs into the center.
5. Let cool 10-15minutes. Store in the refrigerator in an air tight container.

70° and sunny [side up] in Ohio today! 🙌🏼 I’ve been dreaming of this day since fall. Perfect day for a corn fritter breakfast! Hope y’all have a good weekend!! ☀️😎

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
3/4 cup flour
1 cup corn (fresh or canned)
1/4 cup cheddar cheese, shredded
1/4 cup scallions, chopped
1/4 cup milk
1 egg
1/2 teaspoon salt
1/2 teaspoon sugar (optional depending on how sweet your corn is)
1/2 tablespoon chili powder
1 tsp everything but the elote seasoning from #TraderJoes (don’t worry if you don’t have this)
1/4 cup avocado oil, for frying

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. In a large bowl, mix together all corn fritter ingredients.
2. In a non-stick skillet, heat oil over medium-high heat. Make sure the bottom of your pan is covered in a thin layer of oil.
3. Spoon 2 tablespoons of mixture to form each fritter into the hot oil.
4. Flip after about a minute and a half or when you can see the edges beginning to brown. Repeat for other side. I got 6 fritters out of this recipe.

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
1 container of @pvt_selection pimento cheese dip
1 block cheddar cheese, shredded
Carrots for feet and beak
Raisins for eyes

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. Mix together pimento cheese dip and shredded cheese to make a thicker dip consistency.
2. Take 1/3 of dip and roll into a ball for the head. Take the other 2/3 and roll into a ball for the body.
3. Add raisins for eyes, carrots as feet a and beak!

I can’t think of a better way to start spring than with these 𝑭𝒓𝒆𝒔𝒉 𝑺𝒕𝒓𝒂𝒘𝒃𝒆𝒓𝒓𝒚 𝑺𝒄𝒐𝒏𝒆𝒔 and a fresh cup of coffee!

Flaky, buttery, and bursting of flavor from fresh strawberries, finished with a sweet icing! I love this recipe because they can be made a day ahead and leftovers can be frozen! Do you prefer sweet or savory scones?

Store-bought pesto is fine, but in my opinion, there is nothing like fresh homemade pesto. I look forward to growing basil and making pesto each summer. It’s so easy! Do you grow your own herbs? 🌱

Caramelized onions are simple to make, but are a labor of love. It’s the perfect occasion to drink a glass of @avaline while the onions cook down.
