Beet Salad with Honey Balsamic Dressing

Roasted beet salad drizzled with a sweet and tangy homemade honey balsamic dressing. Bites of tart apples, bursts of pomegranate arils and salty, tangy, feta cheese. Pistachios add a nice crunch to each healthy bite!

Ingredients
  

Beet Salad Ingredients

  • mixed greens
  • roasted beets sliced
  • red grapes halved
  • red onion thinly sliced
  • pomegranate arils
  • honeycrisp apple sliced
  • pistachios
  • goat cheese or feta cheese crumbles

Honey Balsamic Dressing

  • ΒΌ cup olive oil extra virgin
  • 2 Tbsp balsamic vinegar
  • 1-2 tsp honey
  • 2 tsp dijon mustard
  • salt and pepper to taste

Instructions
 

  • In a large bowl or inidividial salad plates, assemble all salad ingredients.
  • Mix the salad dressing ingredients together and drizzle over salad! Store any leftover salad or dressing in the refrigerator.
