One Skillet Creamy Chicken Orzo Dinner

Healthy comfort food at it's finest and it is all made in one skillet. The saltiness from the cheese, the creaminess from the orzo mixture and the freshness from the lemon are flavors that are all hard to resist especially when they are all in one bite!

  • 14.5oz container Trader Joe's Mirepoix starter (chopped celery, carrots, and onions)
  • 3-4 cloves garlic minced
  • 2 cups low sodium chicken broth
  • ½ milk
  • 1 cup uncooked orzo
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tsp parsley
  • 2 cups shredded chicken
  • ½ cup Parmesan cheese freshly grated
  • 1 Tbsp lemon juice or half lemon


  • Heat 1 tablespoon olive oil in a non stick skillet. Saute Mirepoix starter for 2-3 minutes until celery, carrots, and onions become translucent. Add garlic and stir until fragrant.
  • Add chicken broth and uncooked orzo to the skillet. Stir in salt, pepper, and parsley. Bring to a low boil and turn heat to medium low. Cook for 10 minutes until orzo absorbs most of the liquid.
  • Add shredded chicken and cook for 2 minutes.
  • Add lemon juice and freshly grated Parmesan cheese. Stir to combine.
  • Serve with freshly chopped parsley and grated Parmesan cheese.
