Healthy Taco Stuffed Sweet Potatoes

  • 1 sweet potato per person
  • 1 pckg ground turkey
  • 1 packet lower sodium taco seasoning

Topping Suggestions

  • roasted corn
  • Mexican blend cheese shredded
  • red cabbage sliced
  • tomatoes diced
  • guacamole
  • cliantro chopped
  • green onions sliced
  • jalapeno sliced
  • lime wedges
  • Chipotle Creama

Chipotle Creama

  • 1/4 cup nonfat plain Greek yogurt
  • 1-1 ½ tbsp Chipotle Cholula hot sauce


  • Make the sweet potatoes in the microwave. Using a fork, poke holes all around the potato. Cook on a plate for 5 minutes, flipping halfway through (If you're cooking more than one potato at a time, I would recommend added a minute or two to your cook potato). Remove and set aside until you're ready to assemble.
  • While potatoes are cooking, cook your taco meat in a non stick skillet. Once meat is cooked, add taco seasoning and cook according to package.
  • Heat up frozen roasted corn in a non stick skillet.
  • Slice a slit on the top of the sweet potatoes. Using a fork, shred inside of the potato and then begin to assemble toppings. Add a layer of meat, corn, and top with cheese. Add all other desired toppings.
  • Mix together nonfat Greek yogurt and Chipotle Cholula sauce to create creama. Drizzle on top. Spinkle with chopped cilantro and green onions.
