Right Back Spatula Breakfast Skillet

  • Cast iron skillet


  • 3 med red skin potatoes cubed
  • 1/2 cup bell peppers diced
  • 2-3 tbsp onions diced
  • breakfast sausage cooked and crumbled
  • 3 eggs
  • shredded cheese cheddar and moterrey jack
  • green onion sliced for garnish
  • red pepper flakes optional
  • Trader Joe's Everything Bagel Seasoning
  • Frank's red hot optional


  • Preheat the oven to 375 degrees.
  • Heat olive oil in a cast iron skillet. Add cubed potatoes and sauté for about 8min until potatoes begin to soften.
  • Add bell peppers, onion and cooked sausage. Sauté until everything is golden brown.
  • Make craters for the eggs. Spray with cooking spray and carefully add eggs. Cook on the stove for an additional 2 mins before adding cheese!
  • Put the cast iron skillet in the oven for about 5min to melt the cheese and finish cooking the eggs. Keep the skillet in the oven longer if you perfer over medium eggs.
  • Garnish with green onion, red pepper flakes, hot sauce and everything bagel Trader Joe's seasoning!
