These Healthy Taco Stuffed Sweet Potatoes are a healthy twist you Taco Tuesday. They are full of health benefits and are a food that is available all year long! This recipe is a quick meal to get on the table in just twenty minutes.
Make the sweet potatoes in the microwave. Using a fork, poke holes all around the potato. Cook on a plate for 5 minutes, flipping halfway through (If you're cooking more than one potato at a time, I would recommend added a minute or two to your cook potato). Remove and set aside until you're ready to assemble.
While potatoes are cooking, cook your taco meat in a non stick skillet. Once meat is cooked, add taco seasoning and cook according to package.
Heat up frozen roasted corn in a non stick skillet.
Slice a slit on the top of the sweet potatoes. Using a fork, shred inside of the potato and then begin to assemble toppings. Add a layer of meat, corn, and top with cheese. Add all other desired toppings.
Mix together nonfat Greek yogurt and Chipotle Cholula sauce to create creama. Drizzle on top. Spinkle with chopped cilantro and green onions.
