Mix ground beef, BBQ sauce, and chopped onion together. Gently form 7-8 slider patties (I generally try to match the size of a slider bun). Set aside and refrigerate until ready to grill/cook.
Prepare fried green tomatoes. I used Whitney's recipe from Sweet Cayenne, which takes takes a total of 45 minutes between prep and bake time. https://sweetcayenne.com/oven-fried-green-tomatoes/
In a nonstick skillet, cook bacon until desired crispiness. Set aside until slider assembly.
While tomatoes are halfway through baking, light your grill or heat olive oil in a cast iron skillet over med-high heat. Add a splash of Worcestershire and a sprinkle of Lawry’s seasoning to each slider patty. Cook for 3 minutes on each side until beef is golden brown on the outside. For a more rare slider, cook less time on each side.
Scoop a heaping tbsp of pimento cheese on each slider. Place burgers on a plate to rest for 1-2 minutes and allow for cheese to melt.
Toast slider buns in skillet or grill.
Assemble burgers! Lay a leaf of lettuce on the bottom slider bun. Top with fried green tomato slice. Add burger and slice of bacon. Attach the top bun with a skewer. Serve with pickle spears, ketchup and mustard!
