Drain mexi corn and to mixing bowl. Add remaining ingredients and stir to combine.
Transfer to a 13x9 baking dish. Bake for 30 minutes or until cheese is bubbling. Broil the last couple of minutes until the cheese is golden brown (optional).
Serve with hint of lime tortilla chips. Enjoy!
