Healthy Dinner in a Pinch: Chicken Sausages with Roasted Vegetables

I was recently asked what my favorite dinner is when I need it NOW. This is it! I always keep chicken sausages on hand whether they’re in the fridge or the freezer. They are so versatile and can go in many different dishes, but this is my go-to and the best part is that it is easy and healthy!

It’s not much of a recipe, but more so cooking the three things individually and assembling in one bowl, but here’s what I do…

  1. Prepare carrots or any vegetable on a foil lined baking sheet. Toss with a little olive oil, salt, pepper, and any fresh or dried herb. Roast in the a 425 degree oven for 15-20 minutes until carrots are cooked through.
  2. While the carrots are roasting in the oven. Make your grain and cook according to package. I often make Cous Cous in chicken broth or add some herb butter to my grains after cooking to add some extra flavor.
  3. Lastly, slice your chicken sausages and brown in a cast iron skillet. This only takes about 5 minutes so I save this step for last.
  4. Assemble in a bowl and garnish with your favorite herb!

Chicken Sausages with Roasted Carrots

My go-to meal when I need food NOW. This meal requires few ingredients and is easy to make!

Ingredients

  • 1 pkg Gilbert's bourbon apple chicken sausages sliced
  • Trader Joe's harvest grain blend
  • 1 bunch Organic colored carrots halved and quartered
  • Fresh herbs chopped

Instructions

  • Preheat oven to 425 degrees. Line a baking sheet with foil. Halve and quarter carrots. Place on baking sheet and drizzle with olive oil, salt, pepper, and fresh thyme. Roast for 15-20 minutes.
  • On the stove top cook Trader Joe's Harvest grain blend according to package. When done, add 1 tbsp on garlic herb butter (optional). For more flavor, you could also substitue low sodium chicken broth instead of cooking with water.
  • Slice sausage and sauté in a nonstick pan or cast iron skillet for ~5min until sausage starts to brown.
  • Serve in a bowl and add extra thyme on top for garnish!
