Here’s what you’ll need to make this recipe:

If you’ve never made caramelized onions, check out this blog post where I break down everything you need to know about making caramelized onions. The flavors of the caramelized onions are what tie all of the other flavors together.

Caramelized onions can be made a day in advance and stored in the fridge until you’re ready to assemble and bake the the pizzas. That’s exactly what I did to prep these mini pizzas – made the caramelized onions the night before and assembled and baked these pizzas right before my friends arrived.

Wines for pairing:

It’s no lie I love sipping on a good glass of wine while enjoying tasty snacks. Blackberries pair perfectly with both white and red wines depending on your preference. I am certainly not a trained wine professional so take what I say with a grain of salt, but here are some suggestions:

Tip: Harder cheeses go will with wines that are more tannic and salty cheeses go well with sweet wines.

Reds:

Whites:

Blackberries go well with sweet wines such as a Riesling, but I don’t care for sweet wines too much. For the white pairing, I relied more on the cheese flavors.

If you’re feeling a mixture of both, then just go with a Rose made with Pinot Noir grapes and you can’t go wrong.

Can you tell I’m excited about these mini pizzas?? Promise me that you will make these Mini Blackberry Brie Pizzas this summer because they are berry berry good!
