Since eyes eat first I’m putting my presentation

Since eyes eat first I’m putting my presentation twist on the viral Strawberry Cheesecake dessert!

Here’s what you’ll need:
+ 1 container of lite cool whip
+ 2 containers @chobani zero sugar strawberry greek yogurt
+ 1 package of @jello cheesecake pudding (3.4 oz)
+ Crushed Graham crackers
+ Freshly sliced strawberries

Mix it all up and assemble in layers — Graham crackers, fluff, fresh strawberries. Repeat until trifles are full.

Serve it in mini trifles or coupe glasses to elevate the presentation. Enjoy!

✨NEW Italian Shredded Beef Sliders✨

Here’s what you need:
3 pounds beef chuck roast (suggest 1lb per every 2-2.5 people)
Montreal steak seasoning
1 onion, thinly sliced
1-2 (1 ounce) packages zesty Italian salad dressing mix
5 - 6 pepperoncini peppers
1/2 cup pepperoncini juice
1 cup beef broth

Generously season chuck roast on all sides with Montreal Steak Seasoning. Thinly slice onions. Add a layer to the bottom of a crock pot. Top with chuck roast. Sprinkle Italian seasoning packet on top. Add another layer of thinly sliced onions. Add pepperonis, pepperoncini juice, and beef broth.

Cover and cook for at least 6hours or until chuck roast easily shreds with a fork. Drain some juice, skim fat and serve on the side for dipping.

I like to serve with toasted ciabatta buns or loaves, provolone cheese slices, and the hot peppers from Potbelly subs (they sell in the stores).

***Go easy on the Italian seasoning packet. You can always add more as it cools. Enjoy!!

NEW Spring Puff Pastry Breakfast✨

Here’s what you’ll need:
1 puff pastry sheet
3-4 slices of Swiss cheese cut into cubes
2-3 slices of ham cut into cubes
Slice 3-4 stalks of asparagus diagonally
4 eggs
1/4 cup half and half (milk or heavy whipping cream work too)
Pinch of salt + pepper
1/2 tsp ground mustard
Monterey Jack cheese

1. Preheat oven to 400° F. Line an 8x8 baking sheet with parchment paper. Set aside.
2. Thaw puff pastry sheet. Prep other ingredients while this thaws.
3. Cube Swiss and ham. Slice asparagus. Set aside.
4. Make egg mixture. In a medium bowl, add eggs, half and half, salt, pepper, 1/2 tsp ground mustard. Whisk.
5. Gently press puff pastry into the parchment lined baking sheet. Add layers of ham, cheese, asparagus and top with some sprinkled Monterey Jack cheese. Carefully pour egg mixture on top and transfer to the oven or air fryer.
6. Bake for 20-30 minutes or until cheese is golden brown and eggs are fully cooked. (My @breville air fryer cooks this in about 20min whereas my oven takes longer).
7. Remove and cut into slices for serving! Enjoy!

Homemade Basil Pesto is one of my favorite sauces for salads, pastas, pizzas, fresh veggies [duh and mozzarella], wraps and all the above and it couldn’t be easier to make. As you’re planning your gardens this summer, don’t forget to grab some basil so you transform it into this delicious sauce.

INGREDIENTS:
2 cups fresh basil
1 cup olive oil
1 cup Parmesan cheese, grated
1/2 cup pine nuts
2 cloves garlic, minced
1 teaspoon salt

The @thenovicechef Greek Chicken Souvlaki Recipe is always my go to for chicken gyros and bowls. I make up a big batch of her Greek Seasoning and save it in an old spice bottle so it’s ready for use anytime I’m craving these bowls.

Bowl toppings:
+tomatoes
+red onions
+kalamata olives
+cucumbers
+fresh feta cheese
+tzatziki (my favorite store bought is @boarshead_official )
+roasted red pepper hummus
+arugula
+crispy roasted chickpeas
+Israeli pearled cous cous with/ melted herb butter (#TraderJoes)
+Lemon wedge for serving

Spaghetti Squash and Meatball Boats: 1 spaghetti s

Spaghetti Squash and Meatball Boats:
1 spaghetti squash
1 jar Trader Joe’s Marinara sauce
Meatballs, homemade or store bought
Red pepper flakes
Dried Oregano
Trader Joe’s Soffritto Seasoning
Pecorino cheese, grated
Mozzarella cheese, shredded
Provolone, sliced
Parsley to garnish

1. Cut spaghetti squash in half lengthwise and remove the seeds. Using a fork, poke some holes on the outside. Place squash face down and cook for 3 minutes in the microwave. Remove and place face up in an oven safe deep baking dish. Preheat oven to 425°. Drizzle squash with olive oil, salt, pepper, and a little pecorino cheese. Set aside.
2. In a saucepan, heat up some marinara sauce. Add red pepper flakes (I used about 1/2 tsp), oregano, and Trader Joe’s soffrito seasoning [optional]. Add homemade or frozen meatballs and simmer down for 15min.
3. Scoop some sauce in the bottom of the spaghetti squash. Add some meatballs. Top with shredded mozzarella and a slice of provolone cheese.
4. Cover with foil and bake for 20 minutes. Remove from foil and bake another 20-25 minutes until cheese is golden brown.
5. Remove from the oven. Sprinkle with freshly chopped parsley and more pecorino cheese - duh! To serve you could either scoop into a bowl and add extra sauce or grab a fork and dig in. 🍝
