I first posted this on my Instagram story and people started messaging me asking what restaurant I ordered this from. UM… BEST compliment ever because it is homemade and now I can tell you exactly how I made it!

Ingredients to make these bowls:
- Israeli Couscous
- Oven Roasted Potatoes & Chickpeas
- Lemon Herb Chicken
- Roasted Red Pepper Hummus
- Tzatziki Sauce
- kalamata olives
- cherry tomatoes
- red onion
- fresh lemon slice
- fresh dill
Have you ever made Israeli couscous? It is also known as “pearl couscous. Israeli couscous is actually a type pasta shaped like a small pearl. If you like pasta then you’ll surely love this couscous. It is best browned before cooking and slightly nutty in flavor. This type of couscous is perfect for any sort of bowl or salad, but equally good as a side dish on its own. I typically buy mine from Trader Joe’s but it can be found in many grocery stores.
**Side note: these roasted chickpeas are also fantastic for snacking!!
Other topping suggestions:
- cucumber slices
- swap couscous for another grain such as farro or quinoa or for fresh mixed greens
- chopped bell peppers
- pita chips
- tabbouleh
- sun dried tomatoes

Tips for storing:
- If you’re prepping this meal ahead of time, I recommend storing the roasted chickpeas in an airtight container at room temperature.
- Pre-assemble cooked chicken, cous cous, and potatoes in a dish to make it easy for reheating. Pack other toppings separately.
- Veggies are best served fresh, chop right before serving.
Can these bowls be vegetarian?
- Yes, if you’re looking for a vegetarian version of these bowls, simply omit the chicken.
