Everyone has a favorite dish to make and one to eat. The good ole classic breakfast skillet checks off both of those categories for me. You ask, why are they so great? Because you can put anything and everything in them and they turn out delicious every time. Savory, cheesy, and a great way to sneak in veggies. Need I say more?
Aside from my love for cheese, I am probably most known for my breakfast skillets. They were one of the first recipes I shared on my Instagram page and to this day one of my most popular recipes that I consistently get tagged in on social media.
Breakfast skillets are a great way to use up items in your fridge that are leftover or about to go bad. Especially now, as we face COVID-19 and want to use up every last bit of food before making the trek back to the grocery store. No matter what you throw in them, they’re always a hit! Plus they are all cooked in just one pan — a cast iron skillet, making cleanup easy.

What you’ll need to make a breakfast skillet:
The equipment:
All you will need is a seasoned cast iron skillet. I have linked a few of my favorites and yes I have just about every size! HA!

A question I often get asked is “how do you take care of your cast iron skillet?”
Lodge has a page on their website where they share great all about the process here! I have also viewed several videos on YouTube that share the step-by-step process on how to care for your skillets. Don’t let “the process” intimidate you — Once seasoned correctly you’ll never want to cook with another pan again. My skillets are my most used piece of equipment in my kitchen, hands down. I love them!
The staple ingredients:
I use potatoes as the base then add a bunch of veggies, breakfast meat, eggs, cheese and bake in the oven. However, I think it’s the garnish that really sets these skillets apart. I ALWAYS use Trader Joe’s everything but the bagel sesame seasoning — it adds the last bits of flavor. Here are my suggested ingredients:
- cubed potatoes of any kind (I prefer red skin potatoes)
- diced bell peppers, any kind
- diced onions, any kind
- breakfast meat (sausage, bacon, ham, etc)
- EGGS
- shredded cheese (I prefer cheddar or Monterrey jack)
- sliced green onions for garnish
- Trader Joe’s Everything Bagel Seasoning (MUST HAVE)
- Hot Sauce [optional]
You could also use any sort of squash or Brussels sprouts too!

Steps to make a breakfast skillet:
- Brown potatoes in a cast iron skillet over medium-high heat. This will take about 8-10 minutes for potatoes to soften and edges to turn golden brown.
- Add vegetables. As mentioned above, any type of vegetables will work. I prefer a little crisp left to my vegetables otherwise they will make everything too soggy! Cook vegetables 3-4 minutes.
- Add Meat. If you’re adding meat, this is the time. I precook any meat I use and add during this step. You will never want to add raw meat during this step or the extra grease will make the rest of your mixture too soggy.
- Add eggs! Make craters and spray with cooking spray right before your add eggs! I like to crack my eggs in small dishes before adding to the skillet to ensure the yolks are not cracked. If they are, then Bella gets brunch too!
- Sprinkle cheese! My go-to cheese are Monterey Jack or sharp cheddar, but any shredded cheese will do!
- Bake in the oven for 5 minutes or longer if you don’t like runny eggs.
- Garnish with sliced green onions and sprinkle with everything bagel seasoning!
- Dig in!
CONFESSION: I travel with a bottle of seasoning when I’m traveling far from home… I take it on work trips, I take it on fun trips, and I have a bottle in my desk at work. Call me obsessed, but everyone else always asks to use it too!

Equipment
- Cast iron skillet
Ingredients
- 3 med red skin potatoes cubed
- 1/2 cup bell peppers diced
- 2-3 tbsp onions diced
- breakfast sausage cooked and crumbled
- 3 eggs
- shredded cheese cheddar and moterrey jack
- green onion sliced for garnish
- red pepper flakes optional
- Trader Joe's Everything Bagel Seasoning
- Frank's red hot optional
Instructions
- Preheat the oven to 375 degrees.
- Heat olive oil in a cast iron skillet. Add cubed potatoes and sauté for about 8min until potatoes begin to soften.
- Add bell peppers, onion and cooked sausage. Sauté until everything is golden brown.
- Make craters for the eggs. Spray with cooking spray and carefully add eggs. Cook on the stove for an additional 2 mins before adding cheese!
- Put the cast iron skillet in the oven for about 5min to melt the cheese and finish cooking the eggs. Keep the skillet in the oven longer if you perfer over medium eggs.
- Garnish with green onion, red pepper flakes, hot sauce and everything bagel Trader Joe's seasoning!
